Buffalo Ranch White Beans

Ingredients
  

  • 1 tbsp oil
  • 15 oz can of white beans drained and rinsed
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp ranch seasoning
  • 2 tbsp buffalo sauce plus more to taste
  • ¼ cup plain nonfat Greek yogurt
  • ½ cup shredded cheese cheddar or mozzarella
  • Black pepper to taste

Method
 

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the drained white beans, garlic powder, onion powder, ranch seasoning, and black pepper. Cook for 5-7 minutes until beans are tender.
  3. Stir in the Buffalo sauce.
  4. Remove the skillet from the heat. Stir in the Greek yogurt and cheddar until creamy and the cheese has melted. Taste for seasoning and add another tablespoon or two of buffalo sauce if desired.
  5. Divide between two bowls and serve.
  6. For an easy extra punch of veggies, add 2 cups of frozen cauliflower rice to the skillet before the white beans/seasonings and cook for 5 mins until thawed and excess moisture is evaporated. Continue with the recipe as listed.
    For extra protein, add ~4oz shredded chicken in with the white beans.
    Top with green onions, chives, extra buffalo sauce, blue cheese crumbles or ranch dressing.
