Another addition to my single-can-of-bean, two serving, quick lunch recipe collection! I was in high school during peak buffalo chicken dip era, and because of that, this flavor combination will forever hold a special place in my heart. This recipe is super versatile and is great for a quick weekday lunch or a nutritious alternative to your favorite game-day treats.
As with all of the simple bean recipes I’ve been creating recently, I love how easy it is to throw in whatever veggie you have laying around into this dish. Frozen cauliflower rice has been my favorite so far. I also think it’s fun to lean into your personal chicken wing preferences when choosing toppings. Pick between ranch or blue cheese for additional sauce toppings or choose your favorite crudités to serve along with it (carrots, celery, etc.) You can eat these beans all by themselves, on the side of chicken, or mix in shredded chicken for a true buffalo chicken experience!
Make sure you’re using an actual buffalo sauce rather than a hot sauce that is commonly used to make buffalo sauce (like OG Franks Red Hot). True buffalo sauce has a bit more going on texture and flavor-wise.
For this recipe in particular, tasting as you go is essential. Depending on how much buffalo favor you want and how many mix-ins you add will ultimately decide how much buffalo sauce to use. I typically go heavier than what my base recipe recommends because I love sneaking veggies in. I don’t recommend adding a ton more ranch seasoned yogurt in if you want more ranch flavor, though. Instead, make additional yogurt ranch dressing to go on top! I feel like this allows the ranch flavor to shine better instead of it getting lost on the buffalo sauce and cheese flavors.

Buffalo Ranch White Beans

Method
- Heat the oil in a large skillet over medium-high heat.
- Add the drained white beans, garlic powder, onion powder, ranch seasoning, and black pepper. Cook for 5-7 minutes until beans are tender.
- Stir in the Buffalo sauce.
- Remove the skillet from the heat. Stir in the Greek yogurt and cheddar until creamy and the cheese has melted. Taste for seasoning and add another tablespoon or two of buffalo sauce if desired.
- Divide between two bowls and serve.
