How These Apple Pie Overnight Oats Won Me Over

Even I, someone who is not a fan of apple pie (I know, sue me), fell in love with these overnight chia oats upon the first bite. They were a product of when I first started really customizing my overnight chia oat recipes and was testing a new recipe nearly every other day. I remember having a list of recipes to test on my phone’s notes app and asking my husband to pick one for the week. To my disappointment at the time, this was the flavor combo he selected. Little did I know, they’d be an instant favorite.

What Makes These Taste Like Apple Pie

I have no notes for any of the components in this recipe. The apple mixture, the spiced chia oat base, and the cinnamon yogurt topping all work together so well. It’s a potent combination, honestly, and this is by far one of the most intensely flavored recipes in my chia oat collection. They’re indulgent and it’s easy to forget you’re eating a healthy meal when you have them for breakfast.

Apple Pie Spice, Pumpkin Pie Spice, or Just Cinnamon?

Something I appreciate about these “bakery” spiced recipes is that you can use whatever you have on hand. Whether you have pumpkin pie spice, apple pie spice, or just plain ole cinnamon, It’s going to work. Of course, an apple pie spice blend would be ideal, but I’m pretty sure the only difference between that and pumpkin pie spice is just more cinnamon. I usually use pumpkin pie spice + a little extra cinnamon when making the chia oat base and apple mixture. But you can also just use plain cinnamon if you’re not a huge baker and that’s all you got.

Apple Pie Overnight Chia Oats

These Apple Pie Overnight Chia Oats combine tender spiced apples, a creamy apple pie–inspired chia oat base, and a lightly spiced yogurt topping for a high-protein, high-fiber breakfast that's packed with cozy fall flavor.

Ingredients
  

Apple Pie Mixture
  • 2 medium apples, diced or grated Honey Crisp, Pink Lady, or Gala apples (about 300 g)
  • 1 tsp cinnamon or pumpkin pie spice
  • pinch of salt
  • 1 tsp butter optional, but highly recommended for flavor
  • 1 tbsp water
Chia Oat Base
  • Prepared apple pie mixture above
  • cups nonfat Greek yogurt 300g
  • 2 tbsp maple syrup or honey 40g
  • 2 scoops unflavored or vanilla protein powder
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice or cinnamon
  • ¼ tsp salt
  • cups rolled oats 140g
  • cup chia seeds 60g
Cinnamon Yogurt Topping
  • cups nonfat Greek yogurt 300g
  • 2 tbsp maple syrup or honey 40 g
  • 2 tsp vanilla extract
  • ½ tsp cinnamon
  • pinch of salt

Method
 

Apple Pie Mixture
  1. Dice or grate the apples. You could also pulse them in the food processor a few times to save time.
  2. Heat a nonstick skillet over medium heat.
  3. Add the butter (if using) and let it melt.
  4. Add the apples, spice, salt, and water.
  5. Cook for 7-10 minutes, stirring occasionally, until the apples are soft and most of the liquid has evaporated.
  6. Transfer to a bowl and let cool completely before mixing with the oats.
Chia Oat Base
  1. In a large bowl, combine the cooled apple mixture, Greek yogurt, maple syrup (or honey), vanilla, and protein powder. Mix until smooth.
  2. Stir in the oats and chia seeds until evenly combined.
  3. Divide evenly into 4 jars.
Cinnamon Yogurt Topping
  1. Mix all ingredients together until smooth and spread evenly over each jar.
  2. Add optional toppings.
  3. Top with extra cinnamon, pecans, crushed graham crackers, or granola!

Notes

This recipe is especially nutrient-dense while still tasting like dessert. Each serving provides approximately:
  • Protein: ~38 g (about 75% of the average Daily Value)
  • Calcium: ~315 mg (24% DV) from the generous amount of Greek yogurt.
  • Fiber: ~10.5 g (38% DV) thanks to the oats, chia seeds, and apples.
  • Iron: ~2.8 mg (16% DV) primarily from the oats and chia seeds.
  • Potassium: ~610 mg (13% DV) from the yogurt, apples, and oats.
  • Omega-3 fats (ALA): Chia seeds contribute roughly 3–4 g of ALA omega-3s per serving, well above the daily recommended intake.
