One thing I really love about this recipe is how scalable it is. I feel like there aren’t many recipes out there that are suitable for two-person households without leaving you with days’ worth of leftovers that you feel obligated to eat (and guilty if you don’t). These one-can-of-beans skillet recipes are perfect! One can makes two servings, and you can easily scale the recipe up if you’re cooking for more people or if you actually want leftovers.

One serving is the perfect amount for a quick, healthy, fiber-packed lunch. If you’re looking for an easy, nutritious dinner, just add your favorite protein to the plate (I usually opt for chicken or fish), and you’re good to go!

Garlic Parmesan White Beans

Ingredients
  

  • 2 Tbsp Extra Virgin Olive Oil
  • 2 cloves minced garlic or 1/2 tsp garlic powder
  • 1 can white beans drained & rinsed
  • 1/2 cup cherry tomatoes halved
  • 2-3 pinches salt
  • 2 handfuls spinach
  • 1.5 oz shredded parmesan
  • Black pepper

Method
 

  1. Sauté garlic in olive oil on medium heat for 30 seconds. (disregard if you're using garlic powder)
  2. Add white beans, tomatoes, and salt and sauté for 5-7 mins. (add garlic powder here too, if using instead of fresh garlic)
  3. Add spinach, cover, and cook until wilted.
  4. Set heat to low and stir in parmesan and black pepper.
  5. Top with extra parmesan and black pepper.
