These Lemon Blueberry Cheesecake Overnight Chia Oats taste like summer in a bowl. With a thick lemon-blueberry base and a creamy cheesecake-inspired topping, they somehow manage to feel like an indulgent breakfast while still being packed with plenty of good stuff. They might even inspire you to take breakfast outside and soak up a little sunshine while you eat.

Another Bakery-Inspired Overnight Oat Obsession

If youโ€™ve explored any of my other breakfast recipes, youโ€™ll know Iโ€™m a sucker for a good overnight chia oat. And I donโ€™t do boring, either. Tiramisu, Strawberry Cake, and Apple Pie are some of my other bakery-inspired varieties, and theyโ€™re all thick, indulgent, and absolutely delicious.

Fresh or Frozen Blueberries? Both Work

You can use fresh or frozen blueberries for the base of this recipe, but I personally love wild blueberries, which I can only ever seem to find frozen. Wild blueberries are much smaller than the cultivated blueberries we typically see at the grocery store. Because they contain less water, their flavor and nutrients are packed into a smaller berry, giving them a more concentrated blueberry flavor. They also contain about 72% more fiber per cup than cultivated blueberries! That said, the oats and chia seeds are already doing a lot of the heavy lifting in the fiber department here, so use whichever blueberry variety you prefer.

Lemon Blueberry Cheesecake Overnight Chia Oats

Ingredients
  

Lemon Blueberry Base
  • 1 1/4 nonfat Greek yogurt 300g
  • 2 cups blueberries fresh or frozen
  • 2 tbsp honey or maple syrup
  • 1/4 cup milk
  • 2 scoops unflavored protein powder
  • 2 tsp vanilla extract
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • ยผ tsp salt
  • 1 1/2 cups rolled oats
  • 1/3 cup chia seeds
Cheesecake Topping
  • 3/4 cup nonfat Greek yogurt 200g
  • 1/2 cup cottage cheese 100g
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • Pinch salt
  • ยฝ tsp lemon zest

Method
 

  1. Add the Greek yogurt, blueberries, sweetener, milk, protein powder, vanilla, lemon zest, lemon juice, and salt to a large bowl. Stir until well combined.
  2. Fold in the rolled oats and chia seeds until evenly mixed. If the mixture feels too thick, add a small splash of milk.
  3. Divide the oat mixture evenly between 4 containers.
  4. In a blender or food processor, blend the 200 g Greek yogurt, 100 g cottage cheese, sweetener, vanilla, pinch of salt, and lemon zest until smooth and creamy.
  5. Spoon the cheesecake topping evenly over each portion of oats.
  6. Cover and refrigerate overnight, or for at least 4 hours, until the oats and chia seeds have softened and thickened.
